Gluten Free Peanut Butter Blossoms
Makes 12 cookies

Cook Time: 8 Minutes
- 1/2 cup peanut butter
- 1/4 cup plus 1 tbsp brown sugar
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1 tbsp of a well beaten egg
- 12 Hershey Kisses
- 2 tbsp granulated sugar (for rolling)
Set oven to 350 F.
In an electric mixer cream together peanut butter and brown sugar on medium until well mixed. Turn speed to low and add baking soda, salt and egg. Mix until all ingredients are well incorporated. Turn off mixer, and using small cookie scoop or rounded tablespoon to scoop dough, roll in granulated sugar and then roll between palms to make balls; place onto prepared baking sheet. Bake for 8 minutes or until the sides and bottoms are light golden brown.
Remove from oven and immediately place unwrapped Hershey Kiss in the center of each cookie, they will crack a little around the edges. Transfer to a wire rack to continue cooling, and enjoy!
