Turkey Meatballs over Zoodles

Some days you eat brownies, some days you don’t. But don’t fret, eating healthy can be fun and delicious. “Zoodles” with turkey meatballs are a great option for a healthy weeknight dinner or meal prepping for the week.

Total Time: about 1 hour

Prep Time: 30 minutes

Serves: 4-6

Ingredients

  • 2 pounds zucchini, spiralized
  • 2 teaspoons salt
  • 1/4 cup freshly grated Parmesan cheese

For the Meatballs

  • 1 pound ground turkey
  • 1/4 cup freshly grated Parmesan cheese
  • 1 large eggs
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tbsp dried parsley
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp kosher salt
  • Pinch freshly ground black pepper

For the sauce

  • 28 ounce can of tomato sauce
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 tsp oregano
  • 1 tbsp basil
  • 1 tbsp parsley
  • 2 tsp coconut sugar
  • 1 tbsp grated parm
  • Salt and pepper to taste

Directions:

  1. Preheat oven to 375 F. Cover baking sheet with parchment paper or lightly oil with nonstick spray.
  2. In a large bowl, combine ground turkey, Parmesan, eggs, oregano, basil, parsley, garlic powder and onion powder, salt and pepper. Using a wooden spoon or clean hands, stir until well combined. Roll the mixture into 1 ½ inch meatballs.
  3. Place meatballs onto the prepared baking sheet and bake for 18-20 minutes, or until all sides are browned and meatballs are cooked through; set aside.
  4. Combine sauce, garlic, onion, parsley, basil, oregano, salt and pepper over med/high heat; let mixture come to a boil; turn down heat and add parm. Let simmer until ready to serve.
  5. Place zucchini in a colander over the sink. Add salt and gently toss to combine; let sit for 10 minutes.
  6. In a large pot of boiling water, cook zucchini for 30 seconds to 1 minute; drain well.
  7. Top zoodles with meatballs and sauce, serve.
