Recently my husband and I started playing tennis, and I thought we were doing really well until the other day when we went to the courts to play a match. Where we go to play has three tennis courts within a fenced area. Walking up to the court there were four other people there, which forced us to go to the middle court. Very apprehensively we started to play, and I’m not kidding when I say we sucked. To be fair, we have only played a handful of times, but it’s pretty embarrassing when you’re chasing the ball more than hitting it. I think we both left a little humbled, and very very sweaty (that much be TMI–sorry). To cheer up my husband Kyle I told him I would cook anything he requested, his response “Orange Chicken”.
Now I don’t know about you, but when I think of Orange Chicken I think of the mall food courts and tummy aches. But I promised him, so I set out to make a healthy Orange Chicken recipes with no refined sugars, and all natural ingredients. And voila, I did it! See below for the recipe 🙂
First, cut chicken breasts into bite-sized pieces. Mine were an an inch cubed, season with salt and pepper. After, the chicken has been cubed and seasoned saute in a pan with olive oil on med/high heat until golden brown, this will take about 7-10 minutes but keep an eye on the chicken to make sure it’s not burning.
While the chicken is sauteing you can make the orange sauce, notice how you make it while the chicken is sauteing-yeah it’s that quick! This sauce has real ingredients and is so easy to make, which makes it a favorite of mine. Simply whisk all of the ingredients together along with flour to thicken (can sub cornstarch if you would like), and you’re ready to add to the chicken.
Pour the finished sauce in with the chicken, let it come to a boil for about 1-2 minutes, or until it’s nice and thickened.
Chicken + Sauce = Magic
Top your finished product with some sesame seeds and serve with a side of steamed Edamame and Jasmine Rice, and you’ve got a home run for dinner!
SKINNY ORANGE CHICKEN
TOTAL TIME: 20 MINS
PREP TIME: 10 MINS
COOK TIME: 10 MINS
ORANGE CHICKEN INGREDIENTS:
- 2 lb. boneless, skinless chicken breasts, cut into bite-sized pieces
- salt and pepper
- 2 Tbsp. olive oil
- orange chicken sauce (ingredients below)
- toppings: toasted sesame seeds, orange zest
ORANGE CHICKEN SAUCE INGREDIENTS:
- 3 cloves garlic, minced
- 1/2 cup orange juice (I use fresh squeezed)
- 1/2 cup honey
- 1/3 cup coconut aminos
- 1/4 cup rice wine vinegar
- 3 Tbsp. flour
- 1 tsp. ground ginger
- 1/2 tsp. pepper
- zest of one orange
TO MAKE THE ORANGE CHICKEN:
Season chicken with salt and pepper.
Heat oil in a large saute pan over medium-high heat. Add chicken and saute for about 7-10 minutes, stirring occasionally, until the chicken is browned and nearly cooked through.
Pour in the orange chicken sauce, and stir to combine. Let the sauce come to a boil, then boil for an additional minute or two until thickened. Remove from heat and serve immediately over rice. Garnish with sesame seeds and additional orange zest.
TO MAKE THE ORANGE CHICKEN SAUCE:
Whisk all ingredients together until combined. If you would like the sauce to be even sweeter, add an extra 2-4 tablespoons of honey.
